A JOURNEY THROUGH AUTHENTIC ITALIAN FLAVOURS

Open since 2015, La Pasta Fresca is an innovative concept by an Italian couple, Stefania Raiola and Giuseppe Godono. This is the first “Artisan Pastificio” of the capital, that is, a place that produces and sells its own pasta, but it's still a restaurant where the best and most authentic Italian flavors are promoted. This is no ordinary restaurant, La Pasta Fresca takes pride in promoting the most authentic Italian flavors.

The atmosphere is quite traditional: when we enter La Pasta Fresca we immediately feel that we enter a time capsule and travel to the golden times of Italy. This restaurant takes attention to detail very seriously: from production and preparation to the surrounding atmosphere, through attentive service, everything is part of a true Italian experience that is not easily forgotten – watch out for the decorative dishes, made through a traditional Italian ceramic practice!

Our journey on the table began with a proof of the ingredients' authenticity, with a tagliere della tradizione italiana. This is a delicious dish with burrata, fried eggplant and traditional charcuterie (with San Daniel prosciutto, salami flavored with funghi, and mortadella) accompanied by dried tomatoes and salad. There's no better way to start the meal - as soon as we taste, we're surrendered to the flavors of the dishes made by Chef Stefano Canegrati.

We sided our meal with an Italian wine, Marco Felluga "Ronco Di Moreri", a "Refosco Dal pedunculo rosso 100%", Stefania's suggestion, who, in addition to managing La Pasta Fresca, is also a sommelier. Then we were delighted with a spaghetti allo scoglio, a fresh artisan pasta dish with an impeccable selection of seafood that will delight lovers of this delicacy. We also tasted the girasoli bi burrata with truffle, a dish of ravioli stuffed with cheese served in parma prosciutto (D. O. C.) – and what a delicious way to continue this unforgettable journey!

To finish with a flourish, we tasted several desserts, a suggestion from Chef Giuseppe. What you really must taste: the delicious Caprese Pie, the wonderful Chocolate Cake With Pistachio, the refreshing lemon sorbet, or the traditional Cannolo - after all, the point is to travel to Italy, and this is the best way to do so.

At La Pasta Fresca, 20 to 30 kg of the most varied pasta are produced daily, the offer is also quite diverse, and the pasta is produced daily by the team. Since the seasonality of the ingredients is respected, it's very likely that you'll be lucky enough to find a special dish or even different pasta on your visit.
