Valdo Gatti believes that it’s possible to simultaneously run an authentic and sustainable restaurant, respecting Mother Nature and all the best she has to offer. That's why all the ingredients are fresh, natural and organic and why all the pizzas have a 100% wheat flour base, of Italian origin, to which water, natural salt and cold pressed organic virgin olive oil is added. Once it is hand-stretched, the toppings are added to the dough. The result? Absolutely delicious: a thin, artisan pizza with low gluten content. There are no pesticides, herbicides, genetically modified foods, hormones or antibiotics involved at any time.
